Lemon drizzle cake

Apologies for the lack of foody adventures round here lately…work, home and life in general have been a bit hectic, but hey I’m here now!

I have been watching ‘The Great British Bake Off’ like so many other people and am thoroughly enjoying it. However, I do watch it with a slight feeling of envy, baking is simply not my forte (is anything?) and I really wish it was.

Now I love lemon cake, but always seem to struggle to make cakes, they usually look more like a large biscuit! However, undeterred I thought what the heck I am going to give it a go! I searched for a suitable recipe (aka simple) and found this one from Tana Ramsay, wife of Gordon. I find that I get on a lot better with less ingredients and simple instructions, so this one is perfect.

I felt quite relaxed making this cake, none of my usual ‘am I stirring the spoon the right way’ anxiety and I must admit I found it very therapeutic, which is a new feeling while baking I can tell you.

Anyway the cake turned out great, beautifully moist and lemony, so thanks Tana. Unfortunately, I have already had three pieces!! I knew there was another reason, other than I am not very good, why I don’t bake often.

Wish I could send you all a piece, if for no other reason than to stop me eating the whole flipping thing!!
